The Bonnat family have been making chocolate in Voiron, France for over 130 years. It was current head Stephane Bonnat’s parents, Raymond and Nicole Bonnat who pioneered Bonnat’s first single origin bars in the 1980’s. Stephane has continued his parent’s tradition and the company now works with 35 different plantations worldwide to produce their bars.
The Juliana plantation is located in the heart of the protected Pratigi zone in Brazil. For the last 20 years, the farmers have been undertaking a rigorous selection process to select and grow only the best cacao. Their aim is simple, if ambitious: to restore the quality of Brazilian cacao to what it was in the 19th Century, when Brazilian cacao was a reference point for fine flavour. As expected of Bonnat, this is an incredible smooth, and creamy bar. The initial richness has a roasted flavour with hints of coffee, which give way to sweet, vegetal notes reminiscent of sweet potato.

I found notes of dried berries (cherry, black currant), fermented fireweed, cascara. Very good.
