Chocolarder – Spruce Shoot, Dark 70% 

This 70% dark bar from Chocolarder with spruce shoots offers a unique flavour profile, with subtle mushroomy and vegetal notes. The smooth chocolate transitions into a gentle sweetness that lingers towards the end. There’s a hint of mineral water freshness and a herbal undertone. As there is little astringency, this bar leaves your mouth watering, allowing the subtle layers of spruce shoot to shine without overpowering the palate.

Original Beans – Cru Virunga, Dark 70%

This rich and sweet dark bar is deeply chocolatey, with the unique flavour of morello cherries and hints of black tea combining to produce a special earthiness. The depth of flavour comes from the rare Amelonado cacao that grows in the Virunga National Park, home to some of the world’s last remaining mountain gorillas.

Hasnaâ – Idukki, India, Dark 71%

This 71% dark bar from Hasnaâ has tasting notes characteristic of Idukki beans. We were immediately hit with fruity flavours of citrus and pineapple, followed by floral notes, nuts and raisins at the end.

Plaq – Ransiki, West Papua, Dark 76%

This dark 76% Ransiki bar by Plaq opens with notes of juicy stewed fruits and caramelised sugar, evoking the warmth of a baked dessert. The bar then reveals regressive notes reminiscent of cookie dough or chocolate cream before developing into a subtle bitterness on the finish. We think this bar reminds us of an aged amber rum or mulled cider—comforting with a warming spice.
