TASTING NOTES
This 60% dark milk bar, made with Indonesian beans, is rich and smooth and not too sweet. It enjoys the same hints of candied fruit and warm spice as the 75% dark of the same origin, with a bit of extra sweetness from the added milk.
ABOUT THE MAKER
Dormouse is a one-woman bean-to-bar craft chocolate maker, established in Manchester in 2014. Isobel, the founder, started her chocolate journey as a student temp at a luxury chocolate shop, before becoming a bean-to-bar chocolatier and eventually investing in her own equipment. She crafts and hand-wraps every bar herself, and has built a strong reputation for her experimental and limited edition bars.
THE BEANS
The beans in this bar are sourced from the Gaura Estate on the island of West Sumba, Indonesia. This 815-hectare family farm has a strong history of cocoa production, and their beans were recognised with a Cocoa of Excellence Award in 2015. Unusually for Indonesian cocoa, the Gaura Estate beans are sun-dried, which means they don’t have the smoky flavour often associated with the region.
