This 66% dark chocolate bar from Marou combines nutty cacao from Đắk Lắk with aromatic white pepper and a little pinch of sea salt, creating a complex and delicious flavour journey.

About the maker

Marou are tree to bar chocolate makers in Vietnam. Samuel Maruta (now sadly deceased) and Vincent Mourou, the founders of Marou,  are well known for their passion for ‘terroir’ in cacao. They understand that climate, soil, and water of each province, along with the different cacao varieties and post-harvest practices, contribute to the different flavour profiles of each origin – much like wine. The Marou name – a combination of Samuel & Vincent’s surnames – has rapidly become synonymous with quality, ethically produced chocolate.

Producing chocolate from the bean in the country of origin is a challenging process. The tropical heat needed to grow cocoa makes producing, storing and shipping finished chocolate bars a logistical nightmare. Marou overcame these obstacles and just two years after they started, they’re already producing some of the best bean to bar chocolate in the world.

The beans

Elevated in the central highlands, Đắk Lắk’s cacao benefits from cooler nights and rich soils, resulting in bright, fruity cacao with a distinctive, high-altitude flavor profile​​. Marou sources its beans from five provinces across Vietnam, working with 15-20 farmers who ferment the cacao.
