Firetree - Mindanao Island, Philippines 73% Dark

This gently rich bar has a citrus and caramel flavour profile with pleasing hints of honey and fig.

Georgia Ramon - Chuncho, Peru 55% Milk

This dark milk bar has a warming, woody profile with hints of toasted nuts and a rich earthiness. It also has a pleasing sharpness to it, reminiscent of blackcurrants.

Fresco - O'Payo, Nicaragua 70% Dark Roast, Long Conche

The dark roast of this bar develops notes of caramel and toasted nuts with a nice floral hint. The long conche cycle softens the brighter notes, which balance the natural acidity with deeper flavours.

We also have Fresco's "270" bar, which uses the same beans but with a light roast and a shorter conche. You can try it here, or buy both bars for a discount in this bundle.

    Welcome to our July 2021 Collection.

    We start this month’s collection with a new bar from Firetree. David and Martyn craft chocolate with a unique melt – smooth and thick – and never fail to bring out flavours as complex and enjoyable as their packaging is sophisticated.

    Then we’re bringing you a 55% milk chocolate from Georgia Ramon. The bar has been made in partnership with ForestFinest, an international consultant specialising in net-zero carbon targets and the preservation of forests and ecosystems.

    Next up is a 70% dark bar from Solomons Gold. Although based on the northeastern coast of New Zealand, they use beans exclusively grown on the volcanic soil of the Solomon Islands, giving their bars a lovely smokey profile.

    Finally, we’re getting to try Bar 272 from Fresco. 272 is made from a Nicaraguan bean with a dark roast and a long conche. You can taste for yourself the effects this has on the bar, by trying the same bean made with a light roast and subtle conche.
