We have some fantastic bars in our February 2023 collection.
Beginning this month’s collection is a very Ecuadorian bar. Made with Ecuador’s emblematic ‘arriba nacional’ cacao, from Los Rios region, Quito-based maker, Conexión have crafted a beautiful 70% dark bar. It’s rich, with woody, floral, nutty, herby and delicious caramelised notes.
For our next bar, we have a 75% dark chocolate; a popular creation from French maker Pralus. François Pralus is a master chocolate maker based in Roanne, France, and here has crafted a rich and buttery chocolate from Madagascan cocoa beans grown on Nosy Be island. This bar melts slowly, and reveals a riot of red berries with dark plums and raisins, leading into deep roasted notes.
The first of two milk bars this month comes from a brand-new maker to our library. Patrick and Peggy at Choco del Sol are based in Germany but have a story that took them through Belize in the past. Here we have their 55% dark milk bar made from Maya Mountain cacao. You’ll find dark and rich cocoa flavours, but softer and with less bitterness.
And finally, another milk chocolate, this time from Uganda’s Latitude. This 49% dark milk bar uses cocoa sourced locally from the Semuliki Forest, crafted into chocolate in Kampala, creating a rich and milky texture which gives notes of brownies and ice cream.
