Welcome to our July 2021 Collection.
We start this month’s collection with a new bar from Firetree. David and Martyn craft chocolate with a unique melt – smooth and thick – and never fail to bring out flavours as complex and enjoyable as their packaging is sophisticated.
Then we’re bringing you a 55% milk chocolate from Georgia Ramon. The bar has been made in partnership with ForestFinest, an international consultant specialising in net-zero carbon targets and the preservation of forests and ecosystems.
Next up is a 70% dark bar from Solomons Gold. Although based on the northeastern coast of New Zealand, they use beans exclusively grown on the volcanic soil of the Solomon Islands, giving their bars a lovely smokey profile.
Finally, we’re getting to try Bar 272 from Fresco. 272 is made from a Nicaraguan bean with a dark roast and a long conche. You can taste for yourself the effects this has on the bar, by trying the same bean made with a light roast and subtle conche.
