TASTING NOTES
This classic 70% dark chocolate – from Zotter’s “Squaring the Circle” range – has been sweetened with maple sugar, which is made from the sap of the maple tree. The body of the flavour is all caramel and maple syrup, with notes of cream, fudge, and liquorice. Look out for subtle hints of green grapes, too!
ABOUT THE MAKER
Josef Zotter is one of the long-established heroes of the craft chocolate movement. He has been producing chocolate since 1992, became famous for his wacky flavour combinations (scarlet runner bean and coriander pastry, anyone?), and was one of the earliest to produce 100% Organic and Fairtrade products. He has worked tirelessly to improve the lives of his growers around the world, engaging in numerous initiatives in Latin America, Africa, and Southeast Asia. He also runs an outstanding chocolate factory visitor experience – The Zotter Experience – that is a must-see for any chocolate-loving visitors to Austria.
THE BEANS
The beans in this bar are an heirloom variety grown in the heart of Peru, near the beautiful mountains of the Junin region. They are grown by the women-led CAC Pangoa cooperative, which was founded in 1977 to organise and educate the region’s coffee growers. As the coffee plants have aged, the cooperative’s farmers have increasingly turned to fine-flavour cocoa as a sustainable and safe replacement.
