The Bonnat family have been making chocolate in Voiron, France for over 130 years. It was current head Stephane Bonnat’s parents, Raymond and Nicole Bonnat who pioneered Bonnat’s first single origin bars in the 1980’s. Stephane has continued his parent’s tradition and the company now works with 35 different plantations worldwide to produce their bars.
Porcelana is the name given to the purest form of Criollo, considered by many connoisseurs to be the finest cocoa in the world. The name derives from the pale, translucent and almost porcelain- like colour and texture of the unripe cocoa pods and beans as they hang on the trees. Native to Venezuela, it is particularly difficult to grow and in many places farmers have replaced the plants with cattle and hardier crops. The bean’s refined flavour profile in addition to its rarity makes Porcelana both the most sought after, and most expensive, cocoa beans in the world. This bar is smooth and sweet with delicate and balanced flavour. There is a slight effervescence at the finish, which just hints of lemon sherbet.
