Chapon – Colombia 78% Dark
Out of stock
This 78% dark bar has been well-roasted, giving it a pleasing intensity to go with the smooth, buttery texture typical of French chocolate. Look out for notes of blackcurrants and oats.
ABOUT THE MAKER
After completing a degree in “Patisserie, Chocolate & Ice Cream” and working in top restaurants in France, Patrice Chapon moved across the channel to the UK. Here he joined La Maison Du Sorbet, which supplies ice creams and sorbets to Buckingham Palace. He became fascinated by chocolate after a visit to Harrods’ Chocolate Hall, and since his return to Paris in 2010, he has been on a mission to create great single-estate craft chocolate. Crafting great chocolate from the bean doesn’t happen overnight. Patrice had to research, find the right equipment, and even make his own machines specially adapted to his requirements.
