TASTING NOTES
Brightness is key within this bar. You can taste a lovely, balanced acidity in this chocolate, which is underscored by subtle notes of citrus and red berry.
ABOUT THE MAKER
After a decade in the corporate world, founders Zulema and Giuseppe were in search of a more fulfilling career. They had come to learn about the growing popularity of Peruvian cocoa as an ingredient, and decided to explore ways in which they might be able to use their native cacao to craft chocolate in Peru. Through their distinctive packaging, they have sought to represent the cultural identity and heritage of their nation. The packaging for Marana’s Piura collection is inspired by the Peruvian painter Pancho Fierro, and has been designed by a local Peruvian artist in the same style.
THE BEANS
These Gran Nativo Blanco beans were sourced from the Piura Valley of northern Peru. Rediscovered in 2008, the varietal was reintroduced to the region with the help of the Norandino Cooperative, founded in 1995 and now serving over 7,000 smallholder cocoa, coffee, and sugar farmers.
