TASTING NOTES
We’d advise trying the dark bar first. Don’t worry that it is “only” 66%, the bright berry notes of the Madagascan beans give this bar a lovely clarity and finish. And then savour the 45% milk. Crafted with Icelandic milk, this bar has a classic rich and velvety milk texture whilst also some “tanginess” from the peculiarities of Icelandic milk. Think kefir or skyrr.
ABOUT THE MAKER
Kjartan and Oskar were classroom friends in Iceland who reconnected twenty years later to create Omnom, Iceland’s first (and to date only) Craft Chocolate Maker. Originally they crafted their bars in the basement of a Petrol Station in Rejkavik. But in 2016 they moved to a new factory, and class room, overlooking the main harbour. In addition to crafting dark and milk chocolate bars from beans they source from known farmers and co-operatives in Madagascar, Nicaragua, Peru and Tanzania, Kjartan has used his experience as a chef to create some renowned “bridge” bars that help uncertain customers try their first craft chocolate bars. Starting with their famous liquorice bar, they’ve now launched a coffee bar, various berry and nut bars plus their renowned “black and burnt” bar which is made with twice roasted barley.
Their packaging is also very distinctive and makes all their bars eminently collectible and giftable.
THE BEANS
The beans in these bars are grown in Madagascar by Bertil Akesson. They come from his Bejofo farm, and are renowned for their red berry and citrus notes.
