Raaka – 100% Cacao
Raaka is a Brooklyn based chocolate maker that focuses on social responsibility as much as great taste.
Founder Ryan Cheney discovered chocolate while on holiday in Thailand. Excited by the flavours of lightly roasted chocolate, he started Raaka to explore low-temperature chocolate making in an ethical way. After a year of experimentation, Ryan teamed up with musician and gastronomist Nate Hodge to develop Raaka’s unique range of “Virgin Chocolate”.
Raaka is dedicated to making “uncommonly delicious chocolate” crafted from unroasted cacao beans, capturing the brighter, bolder, and fruitier notes of cacao. Raaka sources its cacao from farmers and growers it foremost trusts and admires.
This 100% bar is crafted purely from cacao of the Duarte Province of the Dominican Republic. The beans are produced by the Reserva Zorzal co-operative.
The cacao, once reached Raaka’s hands, is not roasted, which is the way Raaka actively processes its cocoa beans and chocolate. Raaka loves the bold, bright, and fruitier flavour of unroasted cacao beans.
This 100% cacao bar is mellow, with a rich cocoa flavour. There is an astringency that grows and smooths out, yielding to a natural sweetness. The texture is soft, with a slow melt but clean melt.
