The dark milk chocolate has an incredibly creamy texture, with the rich Guatemalan cacao showcasing its signature flavour. As Sirene puts, the cacao “steals the show”. Expect rich maple and caramel notes.
ABOUT THE MAKER
Sirene is a Canadian small-batch craft chocolate maker, crafting its chocolate in Victoria, British Columbia. Taylor Kennedy founded Sirene in 2013 after 18 years at the National Geographic Society, having become obsessed with the particular and painstaking process required to make great chocolate. Sirene looks at many factors when considering a new cocoa farmer, and considers its relationship with suppliers as one of equals, working together to deliver the best chocolate possible.
THE BEANS
The 200 hectares surrounding Lake Lachua, Guatemala, are home to the Q’eqchi’ Maya, who rely on the traditional cultivation of cocoa, honey, cardamom, and corn for their livelihoods. They have partnered with Cacao Verapaz, the Guatemalan division of Uncommon Cacao, to centrally ferment and export their high-quality, fine-flavour beans to the international market.

10/10 when left in the sun for a few minutes and paired with Taucherli B6 70%. Sirene becomes caramel, maple and a bit of salt and taucherli has a base flavour of Terry’s chocolate orange with fruity highs. Highly recommend this specific pairing and warming Sirene up a little.

A thick bar with a slightly coarse melt that I’ve experienced in other Sirene bars.
A very sweet bar. The sweetness is like a candyfloss or raw-sugar sort of sweetness. Different to anything I’ve tried before. I wouldn’t have guessed that this was a milk chocolate- it has the texture of a dark chocolate.
Pairs well with Fjak India 68%.
Love the yellow packaging and the artwork on it. The description on the back is informative .
