ABOUT THE MAKER

Sirene is a Canadian small-batch craft chocolate maker, crafting its chocolate in Victoria, British Columbia. Taylor Kennedy founded Sirene in 2013 after 18 years at the National Geographic Society, having become obsessed with the particular and painstaking process required to make great chocolate. Sirene looks at many factors when considering a new cocoa farmer, and considers its relationship with suppliers as one of equals, working together to deliver the best chocolate possible.

ABOUT THE BEANS

The beans for this bar were cultivated in the Semukili Forest in Uganda. The cacao is grown by 1,002 organic Semuliki smallholder famers, 52% of which are women. Latitude Trace Co. (LTC), the company which processes and exports this cacao, has introduced 6 rural collection points to ensure easy access for the farmers, enabling them to sell fresh cacao every week into the network and receive their payment directly when they sell. LTC’s centralised fermentation facility and warehouse is located in the village of Bumate, which sits at the base of the hills leading into the mountains.
