The Smooth Chocolator has crafted a smooth and mild dark chocolate using cacao beans from Belize.
Creamy and smooth, the bar blends a riot of complex flavours. Initial chocolatey hints of nuts and malt give way to sweet caramel. This is followed by a touch of tangerine and tropical fruits drizzled with honey. The chocolate fizzes towards a sherbet finish with an earthy note.
Yoom Kim of Smooth Chocolator sourced these beans from Maya Mountain cacao in Belize. This organisation connects smallholder Belizean farmers growing fine-flavour beans with artisan makers. As well as ensuring better prices for farmers, Maya Mountain leads reforestation projects in Southern Belize. The beans in this bar are certified organic and come from the 2015 harvest.
