Cacaosuyo is a chocolate maker with a simple mission: to make the best chocolate in Peru. That’s a lofty ambition, but the Cacaosuyo team have devoted the last two years of their lives to it. Seeking out rare cacao and transforming it into the best possible chocolate.
This bar is made with rare beans from the Piura region of the country. After a slow build, it hits you with a wave of vibrant fruity notes before fading back to a more rounded, woody flavour.
Made with just two ingredients – cocoa beans and sugar – it’s a wonderful illustration of the range of flavours hidden within the cocoa bean.

Cool to compare/contrast with Cacaosuyo's Piura Nibs bar--I think they're the same chocolate, just with and without inclusions. This chocolate seems "muted" or "musty" if you savor too small a piece (maybe due to its slow melt as mentioned above), but I've found if you really go for it and let a larger chunk melt on your tongue, you get exactly the fruity, agreeably acidic spectrum Dina A. describes.

Slow to melt, taking you on a journey of flavours. Starts off dark, cocoa and nut flavours. Little bursts of lime and orange, and then spicy clove and cinnamon, with a refreshing sweet aftertaste. Although that's just a few of the flavours in this bar. Every block seems to reveal a new component that I didn't see before, certainly a special bar of chocolate.
