ABOUT THE MAKER
Massachusetts-born Denise Castronovo is the leading lady behind Castronovo chocolate. Denise studied Environmental Studies at college, attained a Masters in Economics, and started her PhD in Ecology at the University of Georgia before becoming a professor in the field of mapping technology and spatial analysis. Boston’s harsh winters pushed Denise and her husband to move to Florida, where she first got involved in the craft chocolate movement.
THE BEANS
This bar is made from beans grown in Tumaco, a south-western province on the border with Ecuador known for its hot and humid climate. Blessed with bountiful rivers and heavy rainfall, tropical jungles and mangrove forests flourish, bringing with them the extraordinary diversity of plants that helps to give cocoa beans such complexity of flavour.

Complex flavour. I get roasted-honey, honey, Werther’s original caramels and caramac. Literally mouthwatering.
Pairs really well with Fjak India 68%. When paired with Sirene 65% dark milk, this flavour of this bar becomes far more ‘roasted’ and honey, and Sirene bar becomes more raw-sugar and candyfloss sweetness.
I like the mould on this bar- tiny squares of chocolate. Packaging is a cardboard sleeve with a non-resealable foil package inside.
