Founded by Erik and Ariane Hansen in 2015, DesBarres is a micro-batch manufacturer of single origin, bean to bar chocolate, sourcing direct trade cacao from around the world. DesBarres makes its chocolate with uncompromising attention to detail in order to create the ultimate chocolate experience. Using only cacao and organic cane sugar, DesBarres coaxes out the plethora of wonderful flavours of the cacao it sources.
For Desbarres’ Ambanja 72%, the cacao hails from Bertil Akesson’s Bejofo Estate. Bertil’s Madagascan terroir is highly regarded for the cacao it grows. Big fruity notes and dynamic complexity, DesBarres love working with this particular bean, as they love coaxing out all the layers into a powerful flavour experience.
This dark chocolate bar is fudgy in texture with stoned fruit intwined with liquorice and aromatic spices. The melt is foremost elegant – even surprisingly smooth, despite there being no added cocoa butter.
