About the bar
On first impression, one will be in awe (we hope) of the fudgy texture. This chocolate beholds a smooth, clean melt, and a flavour profile that bursts of citrus fruit and cherries. There is a slight leathery note towards the end that rounds of the overall flavour experience.
About the maker
Founded by Erik and Ariane Hansen in 2015, DesBarres is a micro-batch manufacturer of single origin, bean to bar chocolate, sourcing direct trade cacao from around the world. DesBarres makes its chocolate with uncompromising attention to detail in order to create the very best chocolate experience. Using only cacao and organic cane sugar, DesBarres coaxes out the plethora of wonderful flavours of the cacao it sources.
The beans
The beans for this bar are sourced from Kokoa Kamili, a social enterprise fermentary who operate by purchasing ‘wet’ cocoa beans directly from smallholder farmers, and then ferment and dry the beans following its post-harvest protocol. The cacao beans are all sourced from the Kilombero Valley, Morogoro Region, so as to raise the profile of Tanzanian cocoa.

Earthy aroma. A thin bar with a fudgy melt.
A curious flavour profile. I detected spices and earthiness when comparing it to fruity bars(Omnom Tanzania 70%), malt when compared to a floral/fruity bar(Qantu Chaska 70%) and earthy and cherry flavours when compared to a malty bar (Friis-Holm Nicaragua 65% dark milk).
Surprisingly moreish. I really enjoyed this bar.
