Boho’s Silver Academy of Chocolate 2022 award winning 70% Peruvian dark chocolate is incredibly mellow, with an interesting and sophisticated flavour profile. Think herbs and liquorice. The melting texture is ever so creamy, with a clean finish.
ABOUT THE MAKER
Charlie Burke, the founder of BOHO, started his chocolate journey in the 1980s, when he opened a small chain of chocolate and confectionery shops in New England, USA. Having always wanted to craft their own chocolate, Charlie and his partner, Suzanne, set out in 2014 to learn how to make the very best bean-to-bar chocolate. They founded BOHO after a trip to South America with Taza Chocolate to visit farmers, cooperatives, and local chocolate makers. The name BOHO is short for Bohemian, which signifies their “organic, artistic, and independent approach to making quality chocolate.”
THE BEANS
The cocoa for this bar was sourced from Ucayali River Cacao. URC is a central fermentery that works with over four hundred small family farms along the Ucayali River, a region that has historically been mired in drug trafficking. But now, new government programs and new interest in paying premium prices for their beautiful beans have encouraged farmers to switch from cocaine to cocoa, which is centrally processed to preserve the stunning flavours of the region.
