These Chuncho beans are naturally sweet, which means with just a little bit of sugar you can get a nicely mild 80% bar. It has sweet fruity notes at the beginning with fresh herbal fruit on the finish.
ABOUT THE MAKER
Cacaosuyo is a chocolate maker with a simple mission: to make the best chocolate in Peru. Cacaosuyo produces chocolate from tree to bar. It works with small producers to select the trees where the cacao is harvested so as to guarantee the cacao’s traceability. This means that the genetics and variety of the cacao in Cacaosuyo’s bars are unique, reflecting the incredible ancient heritage of the trees and the families who harvest them.
THE BEANS
The beans for this bar come from the Urubamba Valley in the Peruvian Andes, a stone’s throw from the ancient mountain-top city of Machu Picchu. Urubamba Valley is home to the Chuncho bean, one of Peru’s rarest varieties of cocoa and one of the world’s aromatically richest.

Not for me. The bar is quite waxy and it does not bring you on a flavor journey. I did not get much flavor out of it. Making chocolate is exceedingly difficult so I feel like an idiot being a critic but If I made this bar, I would bring it down to a 70%. There is a lot of 80% , 85%, 100% that I like but this bar is not working at 80%. There is no complexity and very little flavor.
