TASTING NOTES
This Mexican 85% bar enjoys a floral aroma with hints of caramel, and subtle flavour notes of coffee, hazelnuts, and grapefruit.
ABOUT THE MAKER
The idea for Cuna de Piedra began on March 14th, 2019, when Enrique Perez (a food processing engineer and consultant) and Vicky Gonzalez (designer and brand strategist) spoke on the phone about a dream they shared. They dreamed of making a meaningful product, a product that would raise Mexico’s international reputation as a country of bountiful natural resources and high-quality workmanship. And that is what they have achieved, crafting proudly 100% Mexican bars and sourcing their beans direct from farmers and cooperatives around Mexico.
THE BEANS
The beans in this bar are sourced from the Rayén Cacao Sostenible cooperative in Soconusco, Chiapas. The cooperative is composed of 28 farmers, who between them own 50 hectares of orchards, growing cocoa trees alongside fruits such as lemons, coconuts, mangos, mamey, and pineapples. They think carefully about which farmers’ harvests to ferment in the same batch, to ensure complex flavours and consistent quality.
