Excellent temper.
Melt: slow, buttery, smooth
Flavour: light brown soft sugar. Pleasant but mono-dimensional.

It’s a nice chocolate, but we tasted it as part of CR’s tasting experience and the other chocolates were considerably more interesting.

Reviewing the 2018 Saint Thomas crop from Bachelor’s Hall Estate. Classic dark brown colour. Tangerines on the nose. Very sturdy, slow to melt. Start somewhere between malt and marshmallow, and dives towards honey. Walnuts at the finish. Complex and delicious.
