Gateway Bars
Craft chocolate can sometimes be a little daunting and overwhelming. Some consumers are reluctant to brave the unknown and try a bar made with beans from a place they’ve barely heard of, with a percentage that seems higher than they're used to. To 'bridge' this challenge, craft chocolate makers are crafting bars that appeal to the familiar. They make use of local ingredients and flavours that customers recognise, and are tempted to try. These bars act as bridges between the familiar and the new, and are a great way to dip your toes into the wonders of craft chocolate. Experiment, and let us know what you think!

Print / PDFNearyNogs - Gorse Flowers and Irish Seaweed 70% Dark
We were so excited to try this unique combination and it did not disappoint. Inspired by NearyNógs’ stunning Irish surroundings, the incredible earthy base is accentuated beautifully by the subtle coconut flavour of the gorse flowers and the saltiness of the seaweed. Subtle hints of juniper flow through as the thick chocolate melts away.
Standout - 'Nordic Nature' Blueberry, Dark 63%
Chocolate and blueberries, who knew would be such a perfect pair. With this flavoured 63% dark chocolate, the cacao and the blueberry flavours work together. Expect a bright sensation on the palate, yielding to a cooling melt and luscious chocolatey finish.
Fjak - Reindeer Moss and Lingonberry, Dark 70%
This 70% dark chocolate is rich with notes of black cherry, citrus & Autumn berries from the Norwegian mountains.
Friis Holm - O'Payo, Nicaragua, Milk 50% with Liquorice
On the palate, expect a rich creamy chocolate with notes of honey against the herbal and distinctly liquorice flavours. The liquorice has some bite, so do expect a chew against this fudgy Friis Holm milk chocolate.
Fossa - Salted Egg Cereal Blonde Bar
Reviewed by: BOHO - Milk Chocolate with Potato Chips
This is a beautifully creamy and aromatic chocolate bar, with aromas of caramel and rich tea biscuits. The white chocolate, prior to the addition of flavour, had been caramelised which lends itself to a caramel and biscuity flavour. The finish is savoury because of the herbiness of the curry leaves. It really is a fantastic marriage of ‘saltiness’ and ‘sweetness’.
“On first taste I thought, hmm, here’s a chocolate I probably can’t eat but, ever the professional, I went back and tried it again and it became possibly the most intriguing and complex chocolate I ever did eat, and quite addictive. It’s difficult to describe it because there’s so much going on.” – Annalisa Barbieri in The Guardian, 7th March 2021
Believe it or not, the smooth creaminess of milk chocolate combines beautifully with the salt and delicate crunch of potato chips. The contrast in texture and the balance in flavour make for an extremely enjoyable bar, unlike anything else we’ve tried before.
Chocolarder - Wild Gorse Flower
This milk bar has a profile full of nutty caramel and malted hints. An unusual inclusion gives mutedly heathery floral notes, and unmistakable aroma of coconut. The not quite smooth chocolate has an almost fudge-like texture, melting quickly on the tongue. This creation is a rich but palatable summery bar that is difficult to resist.
Omnom - Coffee and Milk
If you’re a mochaccino lover, then this white chocolate from Omnom is the bar for you. Organic coffee beans are blended with organic cocoa butter, cane sugar and Icelandic milk to create a sensationally sweet, smooth bar. The Nicaraguan coffee beans give the bar a clear but not overpowering coffee flavour reminiscent of coffee buttercream.
Omnom - Lakkris and Sea Salt
Wow! What a bar! We can honestly say that we’ve never tasted anything quite like this. Liquorice and chocolate is a popular combination in Iceland, so it was only natural that Omnom bring these two flavours together in one bar. It really is a taste of Reykjavik.
Pump Street - Rye Crumb & Sea Salt, Milk 60%
Rye Crumb is an intriguing inclusion. It gives the chocolate a sharp crunch and distinctive toasted taste that works incredibly well with the salt, which in turn cuts beautifully through the rich milk chocolate. This Rye Crumb bar proved a stern rival for our affections to Pump Street’s Sourdough & Sea Salt bar.
Chocolarder - Oko Caribe, Milk 60% Brown Butter
This 60% Brown Butter milk chocolate revels in coconut, rich, buttery shortbread and sherbet pear-drops. The browned butter flavour is distinct during melt, and the finish lingers a fresh, Cornish vanilla ice cream flavour. The texture of this bar is slightly coarse, signature of Chocolarder’s rustic style.
Chocolarder - 74% Dark, with Cinnamon Toasted Cacao Nibs
This deep dark chocolate delivers red fruit and hazelnut flavours with a great crunch of cacao nibs. The cinnamon adds a warming touch.
Pump Street - Sourdough and Sea Salt
Sourdough is an intriguing inclusion. It gives the chocolate a gentle crunch and pleasant yeasty taste that works incredibly well with the salt. This sourdough bar surpassed our expectations and is one of the most moreish bars in the Pump Street range.
Standout - 'Nordic Nature' Dark 66%, Spruce Shoots
Imagine a flavour profile that combines spice, pink peppercorns, pine needles with a juicy acidity. All of which comes from the Swedish Spruce Shoots, combined with incredibly chocolatey Öko Caribe (Dominican Republic) cacao. This chocolate bar is a 66% but packs a punchy cocoa hit.
Rózsavölgyi Csokoládé – Dark 73% with Black Sesame Seeds
A 73% dark chocolate, made with Venezuelan cocoa and black sesame seeds that give it a wonderfully crispy texture. The sesame flavour is intense, but as it fades, there are some very enjoyable fruity notes too.
Rózsavölgyi Csokoládé – Dark 77% with Peppermint
Hungarian maker Rózsavölgyi Csokoládé’s bars are always beautiful works of art, and this one has the flavour profile to match. Bright peppermint leaves have been ground into their gorgeous Venezuelan cocoa to produce a refreshing bar perfect for after an evening meal.
Askinosie - Dark Chocolate + Malted Milk CollaBARation
This creamy bar is given a wonderful sweet malted barley flavour by the milk, the sweetness perfectly balanced by dark chocolate. Subtle hints of red berries are mixed with hints of vanilla and honey to create a rich and irresistible dark milk bar.
