Considering the fact that a cocoa bean is 52-58% cocoa butter and 48-42% cocoa solids, and that a craft white chocolate bar is as satisfyingly rich as any dark, we think this question is rather harsh. Our makers have created a wondrous selection of bars which display the full potential of white chocolate. Chocolarder’s mature take on a childhood favourite – the caramelisation of the Ghanaian cocoa gives rise to notes of biscuit, caramel, and sweet shortbread. Truly Ghana Gold from the Asokwa Co-operative.
Cocoa Retreat: Toasted White
A delicious toasted white bar, made with Esmereldas cacao butter, with notes of caramel, oats and biscuits.
Sirene - Caramelised White
This bar first starts off as a simple white chocolate. Sirene then roasts the finished batch in the oven to caramelise everything giving it that dulce de leche sweetness.
Friis Holm - White 40% with Nibs
The bar has a richly chocolatey aroma, unusual in a white bar. We found this to be everything you could want in a white chocolate: sweet, with a buttery texture and creamy flavour. By adding nibs to the bar, the bar has a satisfying crunch.
Dormouse Chocolates- 38% Toasted White Chocolate (AOC White Bean to Bar Gold 2018)
The dark blonde bar has a soft, fudgy texture. We noted plenty of sweet caramel, touches of muscovado, and malt. This bar is undoubtedly a sweet treat with a sophisticated caramac-like quality, thanks to the toasting of the milk powder.
Chocolat Madagascar- 45% White Chocolate (ICA White Plain Award Winner 2018)
This rich, high cocoa white chocolate is buttery in texture and melt, and has a flavour that is explicitly pure and warming cocoa butter, but in the background lingers notes of toffee and banana.
Omnom- Coffee and Milk (ICA Flavoured White Gold Award 2018)
If you’re a mochaccino lover, then this white chocolate from Omnom is the bar for you. The Nicaraguan coffee beans give the bar a clear but not overpowering coffee flavour reminiscent of coffee buttercream.
Fossa - Salted Egg White Chocolate
This is a beautifully creamy and aromatic chocolate bar, with aromas of caramel and rich tea biscuits. The white chocolate, prior to the addition of flavour, had been caramelised which lends itself to a caramel and biscuity flavour. The finish is savoury because of the herbiness of the curry leaves. It really is a fantastic marriage of ‘saltiness’ and ‘sweetness’.
Karuna - White Chocolate with Blackcurrants
A bright and tangy vegan bar with a lovely blackcurrant burst on top of the creamy white chocolate.
Jordi’s- 40% White Chocolate with Nibs (AOC Bronze Award 2020)
It’s unusual to include cacao nibs in white chocolate, but the sweet white chocolate is the perfect counterpoint to the thick layer of crunchy, intense cocoa nibs that cover one side of the bar. Together, they add up to a crunchy, sweet, chocolatey and delicious experience!
