Description

When a forestry project named ‘Rescate al Cacao’ was launched to restore cacao production in the Matiguas and Matagalpa areas of Nicaragua, a new movement of cocoa cultivation began. By providing technical management training to farmers, the cacao plantations were reactivated and the farmers reinvigorated – and in November 2000, the La Campesina cooperative was established to continue commercialising the cacao. After 7 years of selling, the company Ritter Sport made contact with the cooperative and offered to buy cacao at a better price – provided they could install community collection centers with the purpose of fermenting and drying the cocoa to guarantee a consistent, fine-flavour product. Today, the cooperative has 459 members, with 10 decentralised collection centers that cover 37 rural communities in the municipalities of Muy Muy, Matiguas, Paiwas and Rio Blanco.

Farming notes: The cooperative is based in the north of Nicaragua; a mountainous area with a tropical and monsoon climate ideal for the successful production of cacao. The average annual rainfall is approximately 1,400 mm2, and the monsoon season lasts approximately 9 months of the year.

Fermentation and drying notes: Fermentation in wooden crates for 5 to 7 days, depending on the cocoa variety or the climatic conditions of the region.
