Description

Hidden deep within the northern mountains of the Dominican Republic lies Zorzal Cacao, a bird sanctuary which produces fine flavour, organic cacao while creating conservation solutions across hemispheres. Named after the Spanish word for “thrush”, Zorzal is the Dominican Republic’s first private preserve. While some cacao trees are planted and harvested on the 1,030 acre Zorzal Estate, the majority of the cacao is collected from a dense 130 acre organic cacao demonstration farm which is divided into 10 parcels. In addition to growing their own cacao, Zorzal also purchases product from 16 neighbouring farms who share their vision for quality and conservation; all-in-all, Zorzal has established a 2,000 acre Private Reserve network which loops over the northern mountain range. In addition to providing these farmers with access to the international market, Zorzal provides a post-harvest protocol to ensure pods are harvested at optimal ripeness, only clean beans are transported to fermentation, and a sustainable management plan is employed.

Fermentation and drying notes: After the ripe beans are harvested, wet beans are transported to the Zorzal central fermentorium in Los Arroyos. Beans are placed into wooden boxes to begin fermentation. After fermentation, the beans are dried until water content is reduced to 7%.
