San Francisco’s TCHO are always happy to talk to you about bean origins, but they’d much rather tell you about flavours notes. That’s why they give their bars names like “SeriousMilk Cacao” and “PureNotes Nutty”.

With a background in technology, TCHO take a scientific approach to everything they do. The company was founded in 2005 by chocolate industry veteran Karl Bittong and tech entrepreneur Timothy Childs and is now headed up by Louis Rossetto, co-founder of Wired magazine.

But TCHO is equally passionate about ethics. One thing TCHO has implemented is the ‘TCHO Source’, which is a programme that addresses the challenges in sourcing great quality cacao, consistently. TCHO Source closes the gaps in cacao farmers’ understandings, be it in quality, fermentation, flavour. TCHO partner with cacao farmers, cooperatives, and cocoa research institutes around the globe. The programme supplies the tools and training to the farmers, so that they can become experts at flavour analysis and in growing quality cacao. All whilst earning a better living.

TCHO Source comprises three elements introduced at origin: Flavour Labs, improved infrastructure, and sensory analysis. In return, TCHO have gained real and measurable results.
