San Francisco’s TCHO are always happy to talk to you about bean origins, but they’d much rather tell you about flavours notes. That’s why they give their bars names like “SeriousMilk Cacao” and “PureNotes Nutty”.
With a background in technology, TCHO take a scientific approach to everything they do. The company was founded in 2005 by chocolate industry veteran Karl Bittong and tech entrepreneur Timothy Childs and is now headed up by Louis Rossetto, co-founder of Wired magazine.
But TCHO are equally passionate about ethics. Through their TCHOSource programme, they partner directly with cocoa farmers to produce the best beans possible. By sharing know-how and working directly with the farmer, they not only produce a great tasting chocolate, but they help improve the lives and livelihoods of the people who make it possible.
